Ok so this is a summer favourite in our home, a recipe passed on from my grandmother's grandmother.
200g zucchini flowers/Pumpkin flowers, washed and cleaned and torn into thin strips
7 handfuls of flour (Gluten Free is Great)
3 handfuls of pecorino/romano cheese
1 zucchini grated
Handful of basil finely chopped
Salt and pepper to taste
Water as required
In a bowl, combine all ingredients and mix. Add water so that the mixture is quite thick, but not too thick. Heat a little olive oil in a pan, pour two tablespoons of mixture into pan, cook both sides until lightly browned. Drain on paper towel or old bread. ENJOY
