ITALIAN EASTER BREAD


Ingredients:

Ok this is an old recipe handed down for the longest time from my grandmother, made as a gift for all the females in the family on Easter.

2 1/4 tsp of dried yeast

1.25 cups soy/almond/cows

pinch of salt

1/3 cup of butter

2 organic eggs

1/2 cup organic sugar

3 1/2 cups organic spelt flour

1 egg beaten

3 organic eggs. EXTRA


Description:

Place the butter in a saucepan with the milk and place on stove top, stiring until the butter has melted.  in the meantime combine yeast, sugar and 2 eggs, mix well.  Add cooled but still warm butter/milk mix.  (make sure its not too hot or it will kill the yeast).  Mix in flour gradually , adding more if necessary.  Form a dough and knead for around 10 mins.

Oil a bowl, place dough in bowl in a warm place.  Cover with a teatowel, leaving at least one hour, but you can leave overnight to rise.  Punch down, then knead again.

Divide dough into around 12 pieces and roll each piece into a rope.  Then plait two ropes together, add uncooked eggs still in the shell to dough.  Place somewhere warm to rise again, leave at least one hour.  Repeat with the rest of the dough

Baste with beaten egg. Then bake in a hot oven around 250 degrees, until baked and golden.  Usually around 20-30 mins.
