This is a great dish for a cold night, when you need something comforting as well as warming. This dish can be either vegetarian or vegan
4 organic potatoes -sebago are great for this dish
100g organic wild rocket
1 organic sweet potato, peeled and cubed
2 organic tomatoes
2 organic cucumbers
Handful of fresh organic parsley
Organic Sour cream
Organic Butter
Olive oil
Salt and pepper to taste
Wash potatoes, then using a fork, poke a few holes in the potato. Using a sharp knife make a cross through the top of the potato (Doing this ensures that potato cooks evenly and quicker). Bake till potato is tender, around 1 hr
Place chopped sweet potato in a baking dish, toss with a drizzle of olive oil and a sprinkle of salt and bake for around 30 mins or until cooked through and browned a little.
Remove potatoes from oven, share out amongst plates. Cut through potato to open it up, by cutting a cross through the centre.
VEGETARIAN
Spread with butter, sour cream and grated cheese to taste,
VEGAN
Drizzle with olive oil, salt and chopped fresh parsley.
Top with tomato, cucumber, rocket, then the roasted sweet potato. ENJOY
