GRILLED ZUCCHINI ROLLS WITH WILD ROCKET


Ingredients:

3 organic zucchini, sliced legnthways

1 tbs organic extra virgin olive oil

1/8 tsp salt

Pinch freshly ground black pepper

1 cup sweet potato mash

  • 1 tablespoon freshly minced organic parsley
  • 1 organic red capsicum, sliced legnthways
  • 2 cups organic wild rocket or baby spinach leaves
  • 1/3 cup basil leaves

**Can use goats cheese, with 1/2 teaspoon of lemon juice as well

Description:

Brush the zucchini with olive oil, season with salt and pepper and grill for about 4 mins until tender.

Combine the sweet potato mash, with the parsley.  

Place a spoonfull of sweet potato mash on a piece of zucchini about 2cm from the end, top with rocket or baby spinach, a couple of slices of red capsicum and top with some basil.  Roll and place on a plate with the seam facing down.
