QUINOA TABOULI


Ingredients:

 

  • 2 cup water
  • 1 cup organic quinoa rinsed
  • 1 cup organic chopped fresh parsley 
  • 1/2 cup organic chopped fresh mint leaves
  • 1/2 cup finely chopped organic spring onions
  • 3 organic tomatoes, finely diced
  • 2 organic cucumbers, seeded and diced
  • 3 tablespoons extra virgin organic olive oil 
  • 3 tablespoons organic lemon juice, or to taste
  • 1 teaspoons macrobiotic sea salt 

Description:

Rinse the quinoa 3-4 times until the water is clear.

In a saucepan bring the water to the boil. Add the quinoa and a pinch of salt.  Turn heat to low and simmer the quinoa for around 10-12 mins, stir a few times during cooking.  Remove from heat and allow to cool to room temperature, fluff it with a fork.

In the meantime combine the rest of ingredients.  When quinoa is ready, allow to cool and toss with the rest of the ingredients, dress with combined olive oil, lemon juice and salt
