KEMI'S KALE AND MINT SALAD WITH CRANBERRIES AND SUNFLOWER SEEDS


Ingredients:

This salad is a ‘chuck it all in’ affair and will serve two as a meal or four as a side salad. Kale is a very strong leaf unlike lettuce and it is best to massage the kale with the other ingredients to soften. One of the great things about kale salad is that it gets better and better as the kale softens and the flavours mingle. We usually start eating this salad the day after it is made.

 

Ingredients

  • 4 cups Kale ( deveined and finely shredded)
  • 1 cup grated carrot
  • 1/2 cup mint (finely shredded)
  • 1/3 cup cranberries
  • 1/3 cup sunflower seeds
  • 3 Tablespoons Olive Oil
  • 1 clove of garlic (crushed)
  • Sea salt and pepper to taste

Description:

Mix in a bowl and enjoy.
