So I was inspired by a meal that I ate out the other day and thought that this would make for a substaintial lunch, a friend passed on a recipe that she loved, and here it tis
2 cups soaked organic almonds
1/2 cup organic coriander
1/4 cup organic parsley
4 tbsp organic lemon juice
2 tbsp organic tahini
1 tbsp organic extra virgin cold pressed olive oil
1 1/2 tsp organic ground cumin
1 tsp sea salt
3/4 cup filtered water
TO SERVE: 150g organic salad mix
2 organic tomatoes, diced or 1 punnet organic cherry tomatoes
2 organic lebanese cucumbers
1 organic avocado, diced
Extra olive oil
Blend the almonds until they are finely ground, then add the rest of the ingredients (except the salad mix, tomatoes and cucumbers).
Place salad mix in a bowl, add tomatoes and cucumbers and avocado, then crumble the mixture over the salad or alternatively roll into balls first. Dress with a drizzle of olive oil. Serve with raw cucumber tzatzki and Sunny Raw Hummus
**You can dehydrate the felafels too, after blending roll into balls and dehydrate for around 4 hours, then make the salad
