2 organic broccoli florets/ bunch of organic broccolini
1/2 organic cauliflower
3 organic tomatoes, chopped
Handful of organic beans/ asparagus
3 organic potatoes, steamed and chopped
1 organic sweet potato, cubed, and roasted
1/2 cup organic sun dried tomatoes diced
1 cup pecorino thinly shaved to serve (optional)
1/4 cup freshy chopped organic parsley
DRESSING:
1/2 cup organic extra-virgin olive oil
2 tablespoons organic balsamic vinegar
1 teaspoon sea salt
Cut the broccoli, beans, asparagus and cauliflower into small bite size pieces and steam for five minutes. Combine with potatoe's, tomatoes, and parsley. Toss to combine.
Drizzle with dressing and top with pecorino. Enjoy warm or cold

Mix all in jar, shake to combine and drizzle over salad
