1 radicchio, washed & leaves roughly torn
250g green beans, steamed and sliced
2 ruby grapefruit, peeled & sliced
½ continental cucumber, deseeded & sliced
1 baby fennel, shaved thinly
¼ cup pistachio
¼ cup dried cranberries
Dressing
1 Tbsp lemon juice
1 Tbsp balsamic vinegar
3 Tbsp extra virgin olive oil
sea salt and freshly cracked black pepper, to season
Place the ingredients for dressing in a small bowl (or screw top jar & shake) whisk to combine, season and set aside.
In a large bowl combine the salad ingredients, pour over the dressing and toss lightly to combine. Season to taste.
** in this salad- adding a roughly chopped avocado is delicious
