OVEN ROASTED RATATOUILLE


Ingredients:

 

1 organic brown onion, roughly chopped

¼ cup organic extra virgin olive oil

2 organic garlic cloves, peeled and whole

¼ cup organic tomato paste

2 organic zucchini, cut into cubes

1 organic eggplant, “                  “

1 organic red capsicum         “   “

½ organic  green capsicum      “   “

sea salt and freshly cracked black pepper, to season


Description:

 

Preheat oven 200, 

In a large non-stick roasting pan add the ingredients, coat in oil and toss to combine. Bake for 30-40mins, stirring occasionally until cooked. Season to taste. Enjoy
