KALE (CAVALO NERO ) WITH CAULIFLOWER MASH


Ingredients:

1 bunch organic kale,wash & trim

½ organic cauliflower,roughly cut

1/4 cup organic olive oil 

1 tspn organic garlic,minced

1 tspn fresh organic tumeric,minced

2 tspn organic cumin, ground

1 organic lemon, juice 

sea salt & black pepper


Description:

 

Pre-heat oven to 180 line oven tray with baking paper


To make the cauliflower mash:

On a baking tray gently toss the cauliflower, 2 tablespoons olive oil, garlic, tumeric & cumin. Roast in oven, 25 minutes or until golden brown.

Place the mixture in a food processor, add lemon juice and pulse until a coarse texture. Season to taste and keep warm.


Bring a large saucepan of water to boil, add the kale. Cook over high heat until tender, about 5 minutes. Drain and set aside.

 

Toss the cooked Kale in remaining olive oil, season to taste and serve with the roast cauliflower mash. Enjoy
