1 organic onion, finely chopped
1 organic carrot, diced
1 organic celery stalk, diced
2 organic garlic cloves, finely chopped
1.5 litres organic (6 cups) good-quality vegetable stock
1 organic Desiree potato, cut into 1cm dice
4 organic beetroot (about 150gm each), scrubbed and cut into julienne pieces, or shred in food processor.
150 gm organic white cabbage (about ¼ small), cut into julienne
Juice of 1 and 1/2 organic lemons
Organic Extra Virgin Cold pressed olive oil
Healthybake Organic Rye Grid (optional)
Sour cream (optional)
Add some olive oil to a deep saucepan, add onions, and garlic, stirring occasionaly until the onion is translucent. Add beetroot, celery , carrot and potato and stir in pot for around five minutes till softened.. Add stock, season with some salt and simmer over a low heat for around 5 mins. Then add the cabbage and continue to cook for 20 mins.
Remove from heat, stir through lemon juice and season with salt and pepper. Serve with a swirl of sour cream and rye bread for a authentic Ukraine dinner.
