1 small chopped organic onion
1 organic carrot, finely chopped
1 stalk organic celery finely chopped
2 organic tomatoes finely chopped
1 vegetable stock cube (we use the Rapunzel organic or make your own)
1 cup organic red lentils
1 organic potato chopped
Saute onion in a little extra virgin olive oil. Then add in tomatoes, saute for two minutes, then add in carrot and celery. Stir for two minutes, add750ml water, add stock cubes, potato and red lentils. Cook for around 20 minutes or until potato is tender. Salt and pepper to taste
