BANANA AND DATE MUFFINS


Ingredients:

250g organic Pitted dates

1 ¼ cups water

90g butter

½ tsp bicarb

2 cups organic wholemea spelt l self raising flour/ or Gluten Free Flour

1 ½ tsp organic cinnamon

½ cup organic dessicated coconut

2 organic free range eggs lightly beaten

2 large organic ripe bananas mashed


Description:

Boil water, add date, let sit for 10 mins, then add bicarb and melted butter. Sift flour and cinnamon in a bowl, stir in coconut. Make a well add in date mix, eggs, and bananas. Fold ingredients till combined.

Spoon into greased muffin trays. Bake at 180 for around 25-30 minutes until skewer comes out clean. Stand for 5 minutes turn out onto wire rack.
