Beetroot is one of those amazing vegetables that satisfies the sweet tooth too.
1 1/2 cups of raw organic beetroot grated
1/3 cup soaked sunflower seeds
1 tablespoon extra virgin cold pressed olive oil
1/2 organic lemon juiced
Water to blend
Place all ingredients in the blender and blend till smooth.
This is a versatile dip that can be developed further with the addition of finely chopped coriander or mint.
