PUMPKIN SOUP


Ingredients:

 

1kg peeled, deseeded organic jap pumpkin, chopped

3 organic carrots, chopped

2 organic sebago potatoes, washed and chopped

1 large organic onion or leek, chopped

1 lt of organic vegetable stock (or two organic stock cubes)

extra virgin cold pressed olive oil

Salt and pepper to taste



Description:
 
 
Place all ingredients in a pan and cook over a medium heat until softened.  removed from heat and blend in batches, whole onion included.  Blend till smooth
Serve garnished with alfalfa or parsley
