Ok this is such a beautiful looking salad, delicious, sweet and something a little different.
3 organic rainbow radish, one of each colour
2 organic carrots
1/2 cup sultanas
handful of organic mint
organic lemon, squeezed
extra virgin cold pressed olive oil
Wash and slice the carrots and radish into thin rounds. Finely chop mint
Place in a bowl , toss through mint and sultanas
Dress with lemon juice and olive oil. Serve
