These look fantastic served up on the plate, they are a great meal on the go, and there is no rubbish to dispose of....
Improvise with what you have, but two ways we do them
4 organic avocados
1 organic tomato
Organic Salad Mix
Fresh organic parsley or mint, finely chopped
Fresh organic cracked pepper
Himalayan Sea Salt
Can add Pan fried haloumi or feta cheese
Slice and de-pip the avocado. Keep SHELLS.
Chop tomato small, wash and dry salad mix
Slice the avocado vertically and horizontally, then carefuly scoop out flesh.
In a bowl, mix avocado, chopped tomato, salad mix, parsley or mint and dress with lemon juice, cracked pepper and a sprinkle of salt. if adding cheese add now!
Scoop into shells and serve.
