BEST ROAST POTATOES


Ingredients:

Ok so quick a simple recipe, but the addition of the water does two things, keeps the potatoes moist on the inside and reducing amount of fat...Perfect

 

2kg organic sebago/nicola potato cut into 5cm pieces

2 tablespoons organic  olive oil


Himalayan Sea Salt to taste

 


Can also add rosemary and 2 whole garlic cloves


Description:

 

Cook potatoes in water on the stove for around 10 mins or until tender. Drain, and shake in colander to soften edges.  Pre-heat oven to 220.  Place potatoes in glass tray with olive oil and 2 tbs water, toss to coat. (if adding rosemary and garlic add now)  Roast , shaking pan occasionally and cook until potatoes are golden and crisp.  Season with salt and pepper. Serve and enjoy.
