FLOURLESS ORGANIC ORANGE CAKES


Ingredients:

2 large organic oranges, washed
6 organic  eggs, beaten
250g ground organic  almonds
100g raw organic demara sugar or other sweetener
1 teaspoon baking powder



Description:

Boil oranges, barely covered with water, in a covered saucepan for 1 hours. Allow to cool, then place in a blender. Add eggs and process.

 In the meantime preheat oven to around 190°C and place some liners in your patty pans or muffin trays.

Mix ground almonds, sugar and baking powder in a bowl, then add orange mixture and whisk to combine. Pour batter into prepared tins and bake for 20 minutes - 40 mins dependant on your oven.Make sure the mixture is not too wet before removing, cool in tins before gently turning out.
