Ok so this has to be one of my most favourite summer italian sweets, its SO refreshing, yet not too sweet and sooo easy to make, grab some organic lemons and away you go.
1 1/2 cups filtered water
scant cup of organic raw sugar
1 cup organic lemon juice (freshly squeezed)
Place the sugar and water in a saucepan and cook on a medium heat until the sugar has dissolved. Remove from heat.
Cool completely then add lemon juice, stir it till its combined. Then place in a freezer proof container and freeze for around 20 mins.
Remove from freezer and using a fork scrape the mix . Return to freezer, repeat again in another 20 mins, then allow to freeze for a minimum 2 hours.
To serve: remove from freezer, flake using fork and serve in tall glasses.
THIS IS SOOO YUM! I am a sucker for lemon , so if you don't love it that much you can adjust the amount of lemon juice. You can also add some lemon rind if you love it more!
