SPINACH, SHAVED FENNEL, BEETROOT AND POMEGRANATE SALAD WITH ROASTED HONEYED WALNUTS
Ingredients:
100g organic spinach*
1x organic baby fennel, shaved
1 cup organic beetroot, grated
1/2 cup organic pomegranate seeds
1/2 cup organic walnuts, lightly roasted in 2 tbsp honey
dressing
3 tbsp organic extra virgin olive oil
2 tbsp organic balsamic vinegar
1/2 tbsp pomegranate molasses (or 1tbsp organic pomegranate juice)**
1/2 tbsp organic lemon juice
sea salt
Description:
In a large bowl, toss all ingredients together. Pour over dressing lightly and place in serving dish.
Dressing
Place all ingredients in a screw top jar, shake well to combine. Season.
* equal quantities of spinach & wild rocket, is a nice option
** juice for a lighter, fresh dressing
