6 organic firm ripe tomatoes, coarsley chopped
3 organic lebanese cucumbers, coarsley chopped
1 organic red capsicum, coarsley chopped
1/4 organic cabbage, julienned
1/2 organic iceberg washed and torn
200g organic olives
220g organic feta, coarsley chopped
2 tbsp organic oregano
1 tsp himalayan salt
1/2 cup organic extra virgin oil
1/4 cup organic lemon juice
Combine tomato, cucumber, lettuce, cabbage, olives and feta in a bowl. Sprinkle with oregano and salt.
Whisk together the oil and vinegar in a jar. Drizzle the salad with the dressing and toss to combine. Serve immediately.
