This is a great dish to have with a group of people, simply chop up all the ingredients, place on a platter in the centre of the table and allow everyone to make their own. Great for kids to make, and take for lunch.
12 x 22 rice paper rounds
Bean vermicelli
Organic Hoisin Sauce
Organic vegetables of choice, you can really use any, we recommend
lots of organic mint, finely chopped
Julienne organic carrot
Julienne organic Lebanese cucumber
Shredded organic iceberg lettuce
Chopped organic tomatoes
Julienne organic capsicum
Organic bean sprouts
You can also add any sort of meat or fish too
Soak the noodles in boiling water for around 2 -5 mins (check packet for instructions). Drain.
Have a bowl with hot water on hand.
Dip a rice paper round in hot water, just so that it gets wet, remove and place on a flat plate.
Place noodles and vegetables of choice inside. Fold in the sides and roll up firnly to enclose the filling. Repeat with all.
